Shrimp Scampi Burgers

So now that it’s summer, I am not eating a whole lot of pasta.  Of course, going gluten free may have something to do with that as well, even though there are a lot of varieties of gluten free pasta out there.  However, the other day, I was craving shrimp scampi.  I mean I had to have it pretty much as soon as I started to think about it.

Shrimp scampi is one of my favorites.  Sweet, tender shrimp with garlicky, buttery, lemony white wine sauce — what’s not to love?

Unfortunately, the answer for me these days is the butter and the pasta.  Did I let that stop me though?  Oh heck no.  I just got a little creative.

I mean it’s summer, so of course the clear answer here is to make shrimp scampi into something I could grill.  Why just grill the shrimp and serve it traditionally?  Who does that?  Some people I am sure that aren’t obsessed with their food processors.

Oh yes, I spun the traditional ingredients through my kitchen bff (also known as my food processor) and made shrimp scampi burgers that we threw on the grill.

They were delicious, and if shrimp is something you normally don’t buy because it is too expensive, these burgers are a great way to stretch the shrimp.  One pound of shrimp made 6 burgers, which fed us for 3 nights, since there are only 2 of us.

And they were totally delish.  They may be my new favorite untraditional burger.

Ingredients

For the Shrimp Burgers (makes 6)

  • 1 pound of shrimp, peeled and deveined
  • 1 clove of garlic, pressed
  • the zest of 1 lemon
  • the juice of 1/2 a lemon
  • 2 tbs dried basil
  • 1 tbs chopped parsley
  • 1/2 tbs crushed red pepper flakes
  • salt and pepper to taste
  • 1 egg
  • 1/4-1/3 cup of oat flour* (feel free to substitute bread crumbs, but I didn’t have any gluten free ones when I made this)
  • 6 slice of fresh mozzarella

How to Make:

  1. Put your shrimp into a medium sized bowl.  Zest the lemon onto the shrimp and squeeze the juice from half the lemon on to the bowl.  Press your garlic clove and add that to the bowl as well.  Add your basil, parsley, salt and pepper.  Let marinade in the fridge for 10-15 minutes but no longer.
  2. Coarse chop half of the shrimp and set aside.  Dump the other half of the shrimp, the egg, and the marinade into the food processor and pulse until blended.  Stir in the rest of the shrimp.
  3. Stir in your oat flour or bread crumbs a little a time until your mixture is still moist but holds together.  You do want the burgers to be more moist than you think you need them to be.  They will dry out some during grilling and you don’t want this burger to be overly dry.  It will make the shrimp tough.
  4. Form into patties.  Grill for roughly 3 minutes per side or until the shrimp is pink and the burgers have nice grill marks.  Cook time will vary based on kind of grill and temperature used.
  5. After the burgers have cooked all the way through, remove from direct heat, keeping warm.  Add a slice of mozzarella and keep burgers in the indirect heat until the cheese melts.  Serve with Parmesan herb mayo.  Recipe follows.

Parmesan Herb Mayo

Ingredients

  • 1/2 cup of light mayo
  • 1/4 grated Parmesan cheese
  • 1 clove of garlic, pressed
  • the juice of half a lemon
  • 1 splash of white wine
  • 3 tbs fresh parsley
  • 1 tbs fresh basil
  • salt and pepper to taste

How to Make:

  1. Add all the ingredients to the food processor and pulse until the mixture reaches your desired consistency.  Serve on the shrimp scampi burgers.
